As a result of the experiment, the optimal mode for cutting minced meat for paste was determined, which provides high organoleptic, physicochemical characteristics and low microbial contamination of the product. Fortification of food raw materials (poultry meat) with an important essential element (lithium) has a greater effect at the stage of raising birds, adding it to their diet. In preclinical studies, the safety of the use of poultry paste enriched with lithium has been proven.
